Easy Meal Idea: Cobb Salad

I just love beautiful food!  While I make plenty of delicious food, in general my dinner preparation arsenal is sometimes lacking in the area of plating.  The food I might never make it into the pages of Martha Stewart Living or Real Simple.  That is why I was very proud of the Cobb salads I made for dinner last Thursday.

Our salads contained a bed of romaine lettuce topped with rows of: red peppers, marinated and cooked chicken cubes, halved grape tomatoes, chunks of avocados, black olives, crumbles of turkey bacon, blue cheese crumbles, and sliced olives.  Some of the ingredients were things already in our cupboards and some were purchases specifically for the salads.

I bought extra eggs so we could have hard boiled eggs on the salad but I forgot to make them.  No worries though, there were still plenty of toppings.

Lately we have been trying to eat more fruits and vegetables and this meal made it delicious to do so.
